The salads that I would make throughout this process (with a couple ounces of leftover meat for protein!) had maybe 10 g of half a dozen different veg in them - a bit of a hassle to chop all that for so little, but worth it for the variety. A corollary to this would be quality over quantity. When my wife was going thru this a few years ago and was having problems tolerating ground beef, the doc suggested that many find filet to be a more tolerable alternative, and noted that many of his patients become gourmets post-op.
