Loving All The "cupcake" Recipes!

I love to cook and I have missed it so much. I have been dying to get to the point when I could try all the different cupcake recipes from "emilys bites". So I tried the French dip "cupcakes" today and I am so excited!! They are delicious and with just one I am stuffed! It's the little things in life that makes me happy!

Im so glad to hear someone likes them. I was looking at the nut content and is not bad for one cupcake and i assumed that would be all one could eat. Have you tried any reheated yet? I was thinking they would be geat to take to work for lunch. Which one is your favorite?

They are good reheated, I think. I usually make them on a Sunday, a Breakfast batch and a lunch batch, and then take them to work for the week. I like the lasagna cupcakes the best so far. And, the hashbrown, egg and sausage ones too. You can get the recipes at Emilybites.com I haven't tried them all yet, but eventually I am sure I'll try most.

:) i printed all the recipes out in advance anticipating that they would be good. I loved her tortilla Soup recipe as well, without the tortillas fo the first two weeks here...was a life saver i need that spice:)

I've made many to include the french dip mentioned above, lasagna, mexican, parmesan chicken and buffalo chicken. I usually make a couple of different types at a time and put them in the freezer, individually wrapped. I like to have variation saved up and pull one out each morning to take to work. I absolutely love this idea. It leaves me little decision making as to what I'm having for lunch other than what kind sounds good for the day!

How do you reheat from the freezer? Just thaw and microwave?

Yes, It's usually thawed by the time I heat it up in the microwave at lunch and it takes about one minute to one minute 20 seconds to reheat. I'm up at 5:00 AM so like not having to figure out lunch so early in the morning. Just grab and go.

Sorry I missed everyone comments yesterday but it looks like the questions were answered. Yes the website is emilybites.com and she has lots of great weight watcher recipes. I have only tried the French dip so far but I'm going to make the cheeseburger and taco ones this weekend to freeze. These are great grab and go!!

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.

      Woohoo! I have 7 more days till surgery, So far I am already down a total of 20lbs since I started this journey.
