Vegetarian Lasagna

I made this for dinner tonight, and it was delicious! Obviously, it won't work for folks who are avoiding Pasta, or who don't like spinach! I'm sorry, but I don't have nutritional data. I got the recipe from our local paper, and they don't always include that info.

Vegetarian Lasagna

1 pkg. chopped, frozen spinach, thawed

¼. lb. lite feta cheese

¼ c. parmesan cheese

1/4. c. part-skim mozerella, shredded

½ white onion, chopped

1-1/2 c. spaghetti sauce

6 lasagna sheets, 8-10” long, cooked, drained and patted dry

1. c. lite ricotta cheese

Squeeze as much moisture as possible out of spinach with paper towels. Mix spinach, chopped onion, and feta cheese.

Lay pasta sheets out on flat surface.

Spread ricotta on pasta sheets, and then sprinkle with mozerella. Spread spinach mix over ricotta/mozerella. Drizzle with a couple tablespoons of spaghetti sauce, then sprinkle with parmesan cheese.

Take edge of each pasta sheet and roll inward. Place rolls, seam side down into casserole dish which has been sprayed with Pam.

Top each roll with a couple tablespoons of spaghetti sauce.

Bake, covered, at 350 degrees for 35-40 minutes.

Yummm... sounds good. I do the same 'kind' of lasagna, but I add mushrooms, cottage cheese, and reg. cheese, not feta or ricotta... but I think I may try next time, at least the feta. Mmmmm..

Whoah... wait, I just read the rest! You roll it up?! Crazzzzzzy! But intriguing :wacko:

Yep, it makes for a pretty presentation. I'd serve it to company, fer sure. But next time, I will definitely try some mushrooms, too!

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.

      Woohoo! I have 7 more days till surgery, So far I am already down a total of 20lbs since I started this journey.
