Cauliflower Egg Fried Rice

1/2 cauliflower chopped finely

1 bunch of green onions chopped

3/4 cup frozen peas

3/4 cup frozen carrots

1 egg

Soy sauce for taste

Sauté vegi scramble egg mix add soy sauce for taste enjoy

Yes I first sauté onions and cauliflower, since frozen vegi's just need warming then move it to one side and cook egg then mix all together.

I can't wait to try this when I can finally eat again. Even throw in some chicken or shrimp to change it up a bit a make it a whole meal. Thanks for the recipe.

I just made this and OMG so freaking good! Next time I would like to add some chicken to up the Protein, but I will definitely be making this alot
