JerzyGirl 25 Posted September 10, 2012 I came across this recipe online while searching for high Protein pureed recipes and thought I would share. It says it makes one serving though it seems to me it might be on the large side based on the quantity of ingredients, and it is a bit high in calories but it does sound delicious. I'm excited to try it. Salsa Scrambled eggs with Peppers and Onions Ingredients: 3 eggs 1⁄2 medium raw green pepper 1⁄4 medium raw onion 1⁄4 c salsa 2 tbsp. whole milk mixed with 4 tbsp dry milk 2 tsp. vegetable oil Instructions: Clean and chop pepper and onion into small pieces; puree in food processor; set aside. Puree salsa & set aside in a separate bowl. Combine eggs and milk in a bowl; mix with a fork until blended. Heat 1 tsp of oil in medium frying pan. Sauté’ mixture into pan and mix constantly with wooden spoon (goal is to scramble eggs). Remove from heat when eggs are thoroughly cooked (not runny). Pour salsa over scrambled eggs and ENJOY!!! kimmy*custis 276 Posted September 10, 2012 I do the same type of recipe but use one, maybe two eggs, fat free milk and use Pam instead of the oil, way less calories and still tastes fabulous! I sometimes throw a couple tbsp's of grated cheese too, even a dollup of fat free sour cream.....yummy!
