shawnd 1 Posted September 3, 2012 Hi Shawnd, Have you begun the soft food stage yet? I am supposed to start tomorrow. I'm trying to brainstorm what I can begin eating as I also go back to work tomorrow. Yes I was allowed to start the soft food stage about a week and a half after my surgery. I eat a lot of chicken and turkey for lunch and dinner and usually an egg or just a Protein shake for Breakfast.
Tryan 20 Posted September 3, 2012 I eat refried Beans, Hamburger, canned veggies (very little cause I'd rather have the protein) eggs, cottage cheese, yogurt, string cheese, tuna, chicken, chicken in the can. I can eat between 2 and 4oz depending on what it is. Right now I eat pretty much whatever I want except raw veggies and fresh fruit. I was told not to start those until 6-8 weeks. I don't eat Pasta, rice, bread, sodas or juice and I only use artificial sweeteners. My family had spaghetti and meatballs the other nite and I ate two 2oz meatballs witha little sauce. it was very good. This morning I had chicken Soup no noodles because I'm sick and the warth feels good on my throat. A little later I will have egg drop Soup for lunch. I came across what I think is a great recipe for pizza crust but I also use it as bread for sandwiches. Cauliflower Crust Pizza Yields: 1 serving* Ingredients: 1 cup cooked, riced cauliflower 1 cup shredded mozzarella cheese* 1 egg, beaten 1 tsp dried oregano 1/2 tsp crushed garlic 1/2 tsp garlic salt Olive oil (optional) pizza sauce Mozzarella cheese, shredded Other additional toppings of your choice *Many people have commented and said that the amount of cheese can be reduced by half, and still taste just as good! Directions: To rice your cauliflower, take 1 large head of cauliflower, remove the stems and leaves, and chop the florets into chunks. Add to a food processor and pulse just until it looks like rice. Alternatively, you can grate the cauliflower with a cheese grater. Place the riced cauliflower in a microwave safe bowl, add 1/4 cup Water, and microwave for 6-8 minutes, stirring half-way through. To make the pizza, preheat the oven to 450 degrees F. Spray a pizza pan or cookie sheet with non-stick cooking spray. In a medium bowl, combine the cauliflower, mozzarella cheese and egg together and stir until well incorporated. Add the oregano, garlic, and garlic salt. Transfer to the cookie sheet, and shape into a 9-inch circle. Brush the crust with olive oil to help it brown in the oven. Baked at 450 degrees F for 15 minutes, until the crust is browned and cooked through the middle. Remove the crust from the oven, add your sauce and toppings. Place under a broiler at high heat until the cheese is melted and bubbly. (About 3-4 minutes). Allow the pizza to cool slightly, then cut into slices and serve. Tryan 20 Posted September 3, 2012 For the above recipe I use skim mozzarella and I use 3/4 cups instead of 1 cup. Make sure you get all the moisture out of the cauliflower after you cook it in the microwave, blot it with a paper towel. Also, I still do protien shakes, EAS they are 100 cal but they only have 17 grams of Protein, I use those as Snacks and they are prepackaged so I can leave them in my car and have them whenever I need them.
