Robyn Owens-Miille 132 Posted August 19, 2012 I love avocado and I know they are great healthy fat. But, I can't eat a whole one even over several days and guac just goes bad in the fridge. This was wonderful and you cannot taste the Beans at all!!!! And it stayed in the fridge for like 4 days without going bad. I used it as a "spread" on my whole wheat tortilla with a slice of turkey, a slice of swiss and some salad greens. INGREDIENTS 1 ripe, medium-sized avocado 2/3 cup white or cannellini beans, rinsed and drained 2 generous sprigs of cilantro 1 ½ Tablespoons fresh lime juice (1-2 limes) ½ green jalapeno, seeds removed and chopped ¼ teaspoon salt DIRECTIONS In a blender or food processor blend all ingredients until smooth and creamy Dip vegetables into spread or use as a topping on chicken NUTRITIONAL ANALYSIS PER SERVING (3-4 tablespoons) Calories: 85 Fat: 5 grams Protein: 2 grams Carbohydrate: 8 grams Fiber: 4 grams Sodium: 105 mg Sugar: minimal http://www.froedtert.com/SpecialtyAreas/BariatricSurgeryProgram/Recipes/ Share this post Link to post Share on other sites
RickM 1,752 Posted August 19, 2012 Sounds good. It's probably the lime juice that helps it keep - that's often the advice one hears to keep an opened avo fresh. For general use as in salads, etc. I slice up the avo and freeze the slices, then thaw and use as needed. Grilled chicken breast with avo and jack cheese.... RickM 1,752 Posted August 20, 2012 I have never thought about freezing them! Does the texture change? It can get a bit mushy if you let it thaw too long (not bad if you are making guac or other kind of dip), and can turn brown like fresh avo if left out for very long. I usually pull out whatever slices I need while I'm preparing the rest of the salad or meal and by the time I'm ready to add the avo it has thawed enough to cut up and is just about right by the time it is served.
