Taco Casserole

I made the taco casserole from the Bariatric Foodie blog in the link below. It was DELICIOUS!. I made myself a small bowl, and I broke up three tortillas chips to spread on the top to give it some crunch. My family enjoyed eating it with chips like nachos. I parceled out the left overs into small tupperware bowls and ate it the next two days. It keeps really well.

meat (whatever you use)


  • 1 small zucchini, diced (I leave the skin on for extra fiber)


  • 1 small yellow squash, diced (same deal)


  • 1 small onion, diced


  • 1 clove of garlic minced


  • 1 envelope of taco seasoning mix


  • 1 can black Beans (I used the spicy kind), drained and rinsed


  • 1 can fat-free refried beans


  • 1 can tomatoes and chiles (or canned diced tomatoes if you don't like the heat)


  • 2 c. shredded Mexican blend cheese (you can do reduced fat or regular but NOT fat free!)


  • Optional toppings:

    • Unflavored Greek yogurt


    • Salsa


    Directions:

    1. In a sprayed pan, sautee veggies with garlic until they are softened. Drain any excess liquid and transfer to a bowl.


    2. Brown ground meat, drain and then transfer to the same bowl and mix with canned beans and tomatoes and chiles.


    3. Mix in taco seasoning thoroughly and then transfer mixture to a 13x9 casserole dish.


    4. Evenly spread out fat free refried beans on top (this may be easier if you heat them in a microwave safe bowl for a minute or so.


    5. Top with cheese and then bake in a 350 oven for about 30 minutes or until the cheese is oozy, melty and slightly browned.

    Also there is a great book called Weight Loss Surgery Cookbook fro Dummies. Great recipes in there. Make sure you get the COOKBOOK and not just the Weight Loss Surgery for Dummies book.

    Thanks Sleeve Master for the advice on the cookbook - I will check it out.

    I did make this recipe tonight and it was fantastic. My husband even ate it and he's pretty picky.

    I used a 9x13 pan and cut into 12 portions but could only eat 1/2 portion and added 5 bite size tortilla

    chips, light sour cream and salsa.

    Great recipe!

        Hi everyone! I’m brand new here. I just went through all my pre-op requirements per my insurance company and now everything has been submitted and I’m just waiting for final approval and my surgery date. I’ve been doing research, watching YouTube videos, TikTok’s, ect.. trying to prepare my mind and what to expect so I’ll be ready for the surgery. I was so sure and so set and so ready and excited. However, now that I’ve done everything & it’s almost here, I am sooooooo scared! I know why I want it bc I’ve tried everything and I just don’t feel like I can lose weight by myself. I’m tired of being overweight my entire life. I’m miserable, but I keep psyching myself out afraid of GERD bc I know how that can be and I don’t want to have to get a bypass after already gaining the courage to even get VSG. I’m scared of complications like I’mgoing to regret doing it and be depressed that I didn’t just be more disciplined and try again to lose the weight on my own even sitting here typing this knowing in my mind i just can’t and don’t possess the discipline. I’m also afraid I won’t be able to handle the restrictions of the sleeve. What do I eat? I don’t know how to eat healthy really and don’t enjoy healthy food. I don’t know how to do this! I feel so defeated!Someone tell me they felt anything similar to this or am I not ready? I thought I was. I am so tired of being sick and tired and so tired of myself and so tired of being stuck and stuck in this body and somebody different on the outside from what I feel inside. I just want to ball up and cry.

        The 14th was my day. I am home and recovery is going pretty smooth. They even let me walk out of the hospital. Picture of me in recovery curtesy of my boyfriend lol.

          Neat you have a pic of this day! I was sooo happy to get my surgery. It was well worth it! And I'm not even near my goal. I had surgery Dec. 2!
