Thegoddesszili 56 Posted June 29, 2012 IlyssaDel, I saw the recipe and I decided to do it. It very good and it taste like lasagna. Shelly's Baked Ricotta 8 oz of Ricotta cheese 1/2 cup grated Parmesan 1 large Egg, beaten 1 teaspoon Italian Seasoning salt & pepper to taste 1/2 cup Marinara Sauce 1/2 cup shredded Mozzarella cheese Mix ricotta cheese, parmesan, beaten egg, seasonings together and place in a oven proof dish. Pour marinara on top and top with mozzarella cheese. Bake it in the oven @ 450 for about 20-25 minutes (best) or nuke it till hot and bubbly. I usually made it first in the oven and heated the leftovers in the microwave 27 Jamie Harris, thisisforme2013, danelle235 and 24 others reacted to this
Gastricsleeve4me 186 Posted June 29, 2012 Great job! I'd done it in a mini-loaf pan a while back and it was sooo tasty...even for those who aren't on a limited diet! You can read more about my mini-loaf pan experience on my blog at http://gastricsleeve4me.blogspot.com/2012/06/baked-ricotta.html 2 Thegoddesszili and kukuiokalani reacted to this
mkardh 52 Posted June 29, 2012 I make this alot and its really good. Instead of store bought sauce I make my own so I know whats in it. Very simple. 1 small can Tomato paste 1 tomato paste can of Water couple tablespoons chooped onions (food processor) and your choice of spices, I use garlic, basil and oregano mix it all in a food processor. tiffers 55 Posted July 11, 2012 Have any of you tried to freeze any of the leftovers? I was wondering if the ricotta freezes well...
Lissa 2,631 Posted July 11, 2012 As for freezing it, I believe that Michele (EggFace) has frozen it with success. I don't freeze it when I make it, mostly because this is a really versatile recipe and it keeps well in the fridge. I'm making it as my covered dish for a block party this weekend. I've taken it to family gatherings and friend's houses and everyone raves about it. No one even misses the pasta! You can also do this in mini muffin pans and use it like hors douvres (don't laugh at my spelling please!), or wrap up the extras to eat later. If you have others in the house, I bet you don't get to eat the leftovers, though!
