dramagirl28 22 Posted June 26, 2012 I need some new ideas! I work evenings normally but for the summer I'm working day shifts. I'm not a morning person so I need Breakfast ideas I can grab to take with me to work. I am only allowed to have "snack" items at my desk, so nothing requiring utensils. Besides Protein Bars or shakes, does anyone have any ideas for on-the-go breakfasts with a little bit of Protein? I'm 10 months post-op.
MegInNOLA 531 Posted June 26, 2012 Have you tried making any of Eggface's "bites"? A couple of those in a baggie would be great--just google the world according to eggface and click recipes. Other alternatives: Chunk of cheese, hard-boiled egg, couple of slices of lunch meat spread with cream cheese and rolled up (I like to put veggies in there, too, like meat sushi, LOL), omelets (you can make ahead, store in fridge, and nuke on your way out the door), Peanut Butter with a cut-up apple for dunking, cucumbers with hummus to dip, etc. etc. etc. I'm not a fan of traditional breakfast food, obviously, but I do like things that can be grabbed from the fridge, thrown in the microwave for a minute or zapped in the blender, and out the door! You might also consider putting the materials for a smoothie into the jar of the blender and store in the fridge--in the morning, just add the ice or whatever frozen ingredients you're going to use, zap it, and go. My magic bullet has rims for the individual serving-size cups (that have handles), designed for easy transport. Edited to say I forgot some pretty obvious things--yogurt, cottage cheese, but those do require utensils. I guess a chunk of cheese or a few slices of lunch meat and maybe a whole-grain cracker or two (or cucumber slices, if you're low-carbing) would work better. Catracks 865 Posted June 26, 2012 Cheeses, nuts, seeds, sliced meats, shrimp with cocktail sauce (mixed with Greek yogurt for a dip), Just keep some wetones or wipes at your desk so you don't muss up the keyboard :-)
Forensikchic 528 Posted June 26, 2012 Im not a morning person either and I am 10.5 months out too. I drink a shake on the way to work, usually muscle milk and then around 10, I have cheese and ritz crackers. I get the cracker cuts or the sliced kind that isnt individually wrapped and cut it down the center so I dont have to cut cheese each time. No pun intended. I eat two cracker cuts on two whole wheat ritz. Hits the spot and is easy to eat with your hands. I also buy the individual Jif Peanut Butter tubs and i can eat half of it with ritz or mini nilla wafers. Just use the mini nilla to dip into the peanut butter with. I dont use utensils for that either. These are my go to breakfast foods, I have them almost every day. if you decide to try the cracker cuts, pack just what you need each morning so it wont need refrigeration, in case you dont have access to a refrigerator. Wheetsin 714 Posted June 26, 2012 Apparently I'm just stalking catracks around today. I need some new ideas! I work evenings normally but for the summer I'm working day shifts. Besides Protein bars or shakes, does anyone have any ideas for on-the-go breakfasts with a little bit of Protein? I'm 10 months post-op. Get a muffin pan. Into each hole thingy, crack an egg and break the yolk up with a fork. Add whatever you like with eggs: cheese, sausage, bacon, chorizo... and then bake around 300 for 10 - 15 mins, or until the egg is just set. If it turns green, it's ok. I promise. Voila - egg "muffins" that you can eat with your hands. I keep turkey Jerky at my desk, and almonds (and lots of other stuff because I can have food-food at my desk, but prefer to eat away from where I work)... One of my fav. Snacks is to microwave turkey pepperoni until cooked, blot off and cool. Turns super crunchy like a chip on steroids. I eat themwith cottage cheese or garden vegetable cream cheese, or plain - but they're kinda strong that way. Deli meat/cheese roll-ups - you can wrap them in a baggie and eat them like a burrito... or whatever you've eaten with the wrapper still on the outside. dramagirl28 22 Posted June 26, 2012 Great ideas everyone! I completely forgot about eggface bites! Those would be perfect. Apples and Peanut Butter also sounds yummy! Thanks so much for the suggestions.

I use deli-sliced turkey or chicken instead of ham, and I make 12 at a time and freeze half. It's two weeks of breakfasts all at once so there's really no work other than reheating (30secs.) How well does that keep throughout the week and as you freeze them?

How well does that keep throughout the week and as you freeze them? I bake them until I can shake the pan and the egg doesn't jiggle, so the yolks won't be runny. They will *look* like they're going to be runny, but the egg comes out light and fluffy and is delicious! I keep 5 in the fridge so I can grab one each morning, and freeze the rest. I find that letting them defrost in the fridge for 24 hours better than warming from frozen. They only need to be nuked for about 30 seconds.
