Applesauce

Anyone know of a good applesauce recipe? Thank you

I make my own applesauce every fall. I use Gravenstein or King apples, so my recipe is based on their sweetness, but there really isn't much to it.

I quarter the apples and boil them until they just start to get soft ... about 5-7 minutes. Then, I have the extruder attachment on my Kitchenaid. I push them through that.

In a 5 quart bowl's worth of sauce, I add one cup of sugar and 2 tablespoons of cinnamon. A few dashes of citric acid (preservative) and that's it.

It's soooo good. While you may think, "Wow! A cup of sugar!" Remember, that is over a 5 quart quantity, so each quart is getting 1/5 of a cup. Not much sugar at all.

I make about 35 quarts each fall after picking season. Pick em in the morning and have them canned by noon. The Kitchenaid attachment makes it soooo easy.

I use gala apples usually. Peel them, core them, put in pot and like 1/4 cup of Water. Boil til soft and then throw into blender. You can add cinnamon or even cook pears with them for a variety

I used to do the same thing before I got the add on device for my Kitchenaid. With that device, I don't have to core or peel the apples. I can do a case of apples start to finish in less than an hour. I just wash, quarter and boil. The device squeezes the good stuff through the strainer leaving the skins, seeds and all that core stuff behind. It is pretty awesome and if you and your family enjoy applesauce, then I recommend this device. Check out the picture on the link I gave above. Applesauce comes out one side, core/skin stuff comes out the other in a continuous operation. No stopping to blend or anything. Yeesh! I sound like a commercial. Now all of my ads are going to be for Kitchenaid stuff.

I then put the sauce in quart jars and then can them the old fashioned way. I do up about 35 jars a year which is about 5 cases of apples. We eat them all winter long and give them to friends/family. I have about 4 jars left now.

I have also done the pear sauce, but there is so much Water content, it really separates. Not a bad thing, but you don't get the yield you think you are going to get.

We just make small batches when we want it. Tho at some point, I'm going to get more organized and do what PDX does!!!

Anyway, we peel/core, then dice the apples. Anywhere from 1 to a few, how ever many we want. Then we boil in a small amount of Water til super soft, then I use my potato masher to break up the chunks. We like it a little chunky so we don't mash 'em too much. Then season to taste. Yumm!

When we buy applesauce, we love the Trader Joe's.

We've done that w/ pears and w/peaches too. While it's still warm, we'd put it over a small scoop of vanilla ice cream. My daughter loves it!

Would be SO good, once cooled a little, over some greek yogurt!

I don't add sugar, just cinnamon and a little vanilla and sometimes a clove. Apples are sweet enough.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
