Gastricsleeve4me 186 Posted June 11, 2012 Hey there - just a few weeks post-op and today was inspired by Emily Bites Buffalo chicken Cupcakes (but not ready for wonton wrappers) and Eggface's famous bites (but, alas, no buffalo chicken recipe). I was craving buffalo chicken, and mexican food, so decided to make my own in two "flavors"; buffalo chicken and chicken enchilada to use up a can of chicken I'd bought at Trade Joe's. It's good (but I'm a weenie, I don't do spicy... so careful on the frank's red hot cayenne pepper sauce, which can be found at walgreen's of all places). The refrigerated leftovers heat up really good and they taste just as good or better than the first time they came of the oven. I want to make some of Emily Bites recipes soon too. I copied several of the cupcake recipes and can't wait to try them. Will post when I do. Good eating to everyone.
