Ricotta Bake

Just made my version of Eggface's Ricotta Bake. I used fat Free ricotta instead of the full fat and seasoned it before adding the egg with oregano, salt, pepper, onion/garlic powder and cayenne pepper....one word, YUM

I have my surgery on Monday, then 2 more weeks of liquids.....then pureed/mushies, I guess when I get to this phase I can use the blender so it will feel like I'm sort of cooking...

I love to cook too....my pinterest board is crazy, since I can't cook, I've been pinning all kinds of stuff....I know half of it I will not even desire to fix when I'm able to cook again!

I made it as well in my mini loaf pan - yum!! I was craving pizza the other night and warmed some up in the oven with turkey pepperoni on top. Fab. Blogged about it, along with pics, if interested.

I'm going to try to make the cauliflower pie/bake in the loaf pan next and see how that goes.

Did they come out alright in the muffin/cupcake pan? I was thinking of doing it the same way but wasnt sure if I would need to put cupcake liners in.

Absolutely perfect, no lining needed....I sprayed a little bit of Pam on it

Okay thanks! I made some when I was on the mushy stage but I made a huge batch, Id rather make a little batch this time in single servings.

I made this for the first time last night and did them in muffin pans. I got six 1/4 cup portion muffins. Perfect.

And man, this was delicious.

      Two months out from hiatal hernia repair.  Surgeon said to expect a lot more flatulence...something about the 'air' no longer being able to 'burp' out so comes out the other end.  That is my experience but have no understanding of why that swallowed air cannot be 'burped'. ???

        As I understand it since your stomach is smaller and not completely resting against your diaphragm anymore you no longer have the ability to "push" burps out as well. Plus, since its smaller and we don't digest slower the trapped air moves a lot quicker out of the stomach so its no longer available to burp out. Hence the other option for removal.

        Me too girl!! Are you in the full liquid diet right now? It’s sooooo hard!

        Not yet. I was told I only have to do 24 hours of a liquid diet. But I have my pre-op tomorrow so I’m going to confirm if I need to do longer.

      Down 33 lbs and slightly stalled, but I'm gonna reevaluate and push through. I started back to work last week after 2 years of being disabled due to mental health as well as my weight. It's a great job and I'm just so happy to have this opportunity at a second chance at life. Hope everyone is having their best journey ❤️ Together, we got this!
