I posted this originally in response to a question about ice cream, then decided it really should be here. It's an ice cream substitute that's good for those who can have whole fruits. All it takes is a food processor, but an ice cream maker would be great to give it a better consistency.

2-3 large, very ripe/black bananas

Good-quality cocoa to-taste

1 teaspoon vanilla

Sweetener to-taste (optional)

Leave the bananas until they're very black but not rotten, to ensure that they're as sweet as possible. Peel them, cut them into 3-4 pieces each, place on a cookie sheet and freeze solid.

Add the frozen bananas to the food processor 1/2 at a time, blending until they're completely creamed. Add the vanilla and 1-1/2 tablespoons cocoa, blending until thoroughly mixed. Taste, then add more cocoa and/or sweetener as needed. It should have a consistency similar to soft-serve ice cream.

If you add it to an ice cream maker and process per the machine's instructions, it should become airier and creamier as it's processed. Either way, it's an excellent dessert that's full of Vitamins and you don't have to tell anyone how good for you it is!

Here's the rough nutrition information. It's based on 1/2 cup of mashed banana and a tablespoon of cocoa.

Calories: 112

Fat: 1.1 grams

Saturated fat: .6 grams

Carbs: 28.6 grams

Fiber: 4.7 grams

Sugar: 13.9 grams

Protein: 2.3 grams

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.

      Woohoo! I have 7 more days till surgery, So far I am already down a total of 20lbs since I started this journey.
