crystalintville 66 Posted May 21, 2012 1 head cauliflower 1/4 c. skim milk Hidden Ranch dry ranch powder (like for making dip) to taste pepper 1 pk Swanson flavor boost Chop & wash cauliflower. Boil Water with 1 pk swanson flavor boost and cook cauliflower until tender. Drain and put back into pot on low to cook out moisture and add skim, ranch powder, and pepper. I used the back of a big spoon which got it kinda mashed but my immersion blender made it very smooth like mashed potatoes. I didn't know if it would taste good without the added fat (cheese, butter) but they were freakin' awesome. It was my last meal since I have 3 days of liquid before my big day. Mab 44 Posted May 21, 2012 I make mashed cauliflower, too. I boil it until its falling apart. I use smart balance, cream cheese and cheddar cheese to mix with it. Then I put more cheddar cheese on top and stick it in the oven to brown it a bit. DELICIOUS.
