Kristin 34 Posted May 28, 2012 I made this one, out was delicious! I added some canned diced tomatoes. Next time, I'm going to add mushrooms. Baked up, then sliced into eight wedges and froze them. Reheated on the microwave for a great meal. Crustless Spinach Quiche 1 TB Olive Oil 1/2 onion 1 package frozen spinach 5 eggs beaten 3 cups muenster cheese shredded Salt & Pepper to taste Sautee onions in oil until tender, add spinach to pull out some of the moisture. Beat eggs in bowl, add cheese, salt and pepper. Then add spinach onion mixture. Pour into pie pan. Bake at 350 for about 30 minutes until browned. Yummmm! Can add mushroom, onion, etc. to taste. Great for high Protein road trip food! (Put in cooler) Ingredients *Flour, white, 0.5 cupSpinach, fresh, 0.8 package (6 oz)Egg, fresh, 2 largeEgg white, 3 servingFeta cheese, 0.5 cup, crumbledMilk, 1%, 1.33 cup1/2 tsp baking powder1/4 tsp saltPinch of Cayenne Pepper1/4 tsp nutmegDirections Chop spinach into small pieces. Blanche spinach in frying pan until wilted. Mix all dry ingredients together, mix all wet together. Pour into mini muffin pans bake @ 350 for around 15 minutes until toothpick inserted into middle comes out clean and outer section is browned.
