Craving Smooth Egg Salad Or Great Deviled Eggs.. Help!

Recommended Posts

Ok, my sister in law makes THE best potato salad for the holidays... it's smooth and creamy, like the inside of a deviled egg, which made me think... eggs/protein, do-able! So who has THE best egg salad or devil egg recipe possible for this chic that just moved to soft foods? Anyone? Please? TY! :)

I use eggs, mayo, salt, pepper, onion powder and to really kick it up a notch, fancy shredded cheese ( cheddar or pizza blend). It is really good :)

I smash to eggs up with a potato masher, then a fork to get them really smushed. You could use a mixer if you want them whipped. I add mayo, mustard, garlic salt, pepper & a little paprika. I know some people add pickle relish too, but I don't like it so I skip it. :)

You can also add a teaspoon of dijon if you like that flavor also (just reduce the salt). I am looking forward to week three diet. I am on Day 6 post op and am getting tired of 4 weeks of protien shakes

Any tips for creamed Soups I have never had one before.

I like cream of chicken. And cream of chicken with mushroom. That's about the only one that I realllllly enjoyed myself!

My deviled eggs are pretty standard - I just use mayo (or miracle whip), yellow mustard, salt/pepper, and a little Pickle Juice (dill) or white vinegar. The vinegar/pickle juice gives it a little "zip". :) I use the same base recipe for my potato salad too.

Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
