favoredone 590 Posted April 10, 2012 So, I'm trying to incorporate more veggies other than broccoli.. I fried 6 slices of bacon until crisp... discarded the oil, but left the brown bits of goodness... Sliced a sweet onion into thin strips, and sauteed until they carmelized in some EVOO (about a tbsp).... added 3 medium yellow squash (sliced) and 2 tbsp of McCormick's Perfect Pinch Veggie... simmered for 20 minutes.. Added crushed bacon on top.. It was delicious!!! I'm going to prepare it w/ mushrooms and diced chicken next time!! Share this post Link to post Share on other sites
lsereno 2,525 Posted April 10, 2012 Yum that sounds good. I bought a mandoline to make slicing veggies thin super easy. I like zuchinni and yellow squash done that way. Sometimes I add jarred red pepper too. Baby spinach is easy too. Just toss a handful in Soups or wilt it quick with a little oil and then put under whatever Protein you're eating.
