I have been a food snob for years and am proud of it. Lets just say I didn't gain my weight on McDonald's french fries. so my new Quest is to find delicious , healthy, Protein packed recipes. To all the expierenced VSGer's please let me know if this recipe is a keeper.

Ingredients

Directions

In a large nonstick skillet, heat 1 tablespoon of the oil, over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add 1/2 of the spinach and cook for 2 minutes until wilted. Repeat with the remaining spinach. Let the mixture cool for a few minutes.

Place the remaining olive oil, spinach mixture, cannelloni beans, lemon juice, balsamic vinegar, salt, and pepper in the bowl of a food processor.

Blend until the mixture is smooth. Transfer to a small serving bowl. Serve with endive spears, crostini or pita chips.< /p>

I don't see anything wrong with it, although you're not going to be able to eat much at a time for a long time. You may want to consider whether you have someone around to help you eat this. Also you'll probably want to use veggies instead of chips/breads to dip this for eating...and you're still not going to be able to eat much at a time.

What are the nutrition facts for this recipe?

If you use My Fitness Pal, you can plug the ingredients in, select a serving size and it will give you the nutritional values for the calories, fat, Protein, etc. I typically do this with recipes to make sure the protein is high enough to be worth it to eat. :)

Those are pretty good stats - if you're not a low-carb person, that is. :) I try to make sure anything I eat has at least 5 grams of Protein per 100 calories (or ideally less, of course).

Lissa, thanks! I didn't weigh today, tomorrow is my official weigh-in day and I'm crossing my fingers and toes that I hit it tomorrow!

Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
