If anyone wants a yummy recipe for turkey meatloaf and mashed cauliflower, lemme know. I think I've outdone myself ;-)

OK, so the meatloaf recipe is kinda from memory so some of the measurements aren't exact.

1lb ground lean turkey

1 carrot finely chopped

1/4 large onion finely chopped (I usually toss the onion and carrots in the food processor for a few seconds)

1tbs fresh minced garlic

1tbsp fresh chopped parsley

2tbsp Italian seasonings

1 large egg

1/2c whole wheat bread crumbs

1tbsp olive oil

1cup of your favorite Tomato sauce

1 cup parmesan cheese

Preheat oven to 400*

In a sauce pan, sautee carrots, onion and garlic with olive oil until the onions are translucent and the carrots are tender. Set aside to cool.

Once the carrot mixture is cool mix turkey, egg,carrot mixture, parsley, italian seasoning, bread crumbs, 3/4 cup parmesan, and 1/2cup of the tomato sauce in a large bowl with your fingers. Its ooey and gooey but there really is no better way to make sure it's mixed well.

Transfer turkey mixture to an ungreased 8x10 baking dish and shape into a loaf. Cover with remaining tomato sauce and sprinkle remaining parmesan on top and bake for 30mins

Cauliflower Mashed Potatoes

Ingredients:

1 1/2 pounds cauliflower,

cut into large florets (about 8 cups)

3 garlic cloves, peeled

2 (14-ounce) cans lower-sodium chicken broth

Salt

Freshly ground black pepper

2 tablespoons chopped fresh chives

In a large saucepan, combine cauliflower, garlic, and broth. If cauliflower is not completely covered by broth, add Water to just cover. Bring to a boil, reduce heat to medium-low, and simmer until cauliflower is tender, about 12 minutes.

Reserve 2 tablespoons of the cooking liquid, then drain cauliflower and garlic. Transfer cauliflower and garlic to the bowl of a food processor and process until smooth, pulsing in some or all of the reserved cooking liquid, if necessary, to moisten mixture. Season with salt and pepper to taste. Just before serving, stir in chives. Serve warm.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
