Low Carb (Sf) Cheesecake

I made these cute little muffin sized cheese cakes. Here's the link for the receipe I used. I couldn't find the almond mill so I used walnuts for the "crust". I was able to make 12 regular sized muffins and 3 large muffin size cakes with this receipe. I haven't calculated the exact calories but, I'm guessing about 350. So, only for special occasions. I will freeze the rest.

Those look delicious! Thanks for sharing the recipe and the pic. I have made something similar without a crust at all, and I used a mini muffin pan. They are yummy for a treat. I will try these with the crushed walnuts or maybe pecans.

6 servings without the nut crust

NUTRITION:

804 calories, 77 grams fat, 9 grams carbohydrates, 20 grams Protein per serving. This recipe is low in carbs.

Feedyoureye, Yes it's 804 cals per serving if you make 6 servings but, I made 15 servings so, I figure each muffin size serving is about 250 cals. Just a guess tho.

      Two months out from hiatal hernia repair.  Surgeon said to expect a lot more flatulence...something about the 'air' no longer being able to 'burp' out so comes out the other end.  That is my experience but have no understanding of why that swallowed air cannot be 'burped'. ???

        As I understand it since your stomach is smaller and not completely resting against your diaphragm anymore you no longer have the ability to "push" burps out as well. Plus, since its smaller and we don't digest slower the trapped air moves a lot quicker out of the stomach so its no longer available to burp out. Hence the other option for removal.

        Not yet. I was told I only have to do 24 hours of a liquid diet. But I have my pre-op tomorrow so I’m going to confirm if I need to do longer.

      Down 33 lbs and slightly stalled, but I'm gonna reevaluate and push through. I started back to work last week after 2 years of being disabled due to mental health as well as my weight. It's a great job and I'm just so happy to have this opportunity at a second chance at life. Hope everyone is having their best journey ❤️ Together, we got this!
