Fajita Frittata

To keep things lively and low carb in the kitchen, I have been experimenting. eggs will always be a love of mine, and as I was scanning the interweb I found a Paleo Fajita Frittata recipe. It looked delicious. I would have definitely loved to try some fresh peppers and onions in this recipe but it wasn't what I had on hand so I modified it a bit for my budget and pantry. It turned out delicious!

1 bag of moe's seasoned fajita veggies (3 in a package at BJ's for less than 5 dollars)

16 oz of round eye steak (Flank steak would probably work even better)

2 tbs chili powder

1 tbs cumin

2 tsp cayenne pepper (I might have added more, I like things HOT!)

2 pinches of pepper

10 eggs

1 cup of finely shredded mexican blend cheese

First, grease the pan with a no calorie olive oil spray and set the oven to 350 degrees.

Cut the round eye steak into cubes. Add your spices, and stir until spices are well mixed. Don't cook the meat through. Add frozen vegetables. Cook until softened, and cook the meat until desired color. Add cooked meat and vegetables to a 9x9 circular casserole dish.

Scramble eggs. Add to casserole dish. Place in the preheated oven. Let cook for 20 minutes. For the next 10 minutes place on broil. Remove dish. Sprinkle cheese. Place back in for two minutes or until cheese is melty.

Serve and enjoy!

P.S. This is SUPER easy to make and really yummy says the boyfriend. Also, it has ridiculous amounts of Protein. I set the servings to 8, but I couldn't even finish a whole slice. However, it still calculates pretty high even if you finish 80% of said slice. :smile1:

Sounds good to me...gonna give it a shot some time. I always need breakfast/brunch items to take to church for ladies group. thanks for sharing...

BJ's is a wholesale club similar to Sam's Club, costco, etc....I think they are only in the south as I had never heard of them before I moved to Florida.

That recipe sounds delicious - will definitely be giving that a try! I am heading to BJ's this morning anyway so I'm adding the veggies to my list! Thanks for sharing!

Thank you, Jay. Exactly, I forget about the different shopping centers around the country, lol. I think Sam's Club carries the little packs of veggies too.

Also, yes, Paleo is without dairy, but I modified this recipe for my kitchen and tastes. I love cheese, and it adds yumminess and Protein. I am sure if you wanted to save on calories though you could also remove the cheese. It would still be delicious I am sure.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.

      Woohoo! I have 7 more days till surgery, So far I am already down a total of 20lbs since I started this journey.
