Cooking Small Portions - Freezing?

I am starting my low carb two week pre surgery diet tomorrow. I have uncooked beautiful sweet potatoes and was thinking about roasting them and mashing and freezing small portions so I can use in my puree and return to solid food phases.

I am curious how, in general, people deal with cooking such small portions? Any tips on freezing or other ways to handle this?

I've been getting ready for my post op diet as well. I've made beef and turkey broth. I also pureed turkey breast and put one oz portions in my mini muffin tins to freeze and then I can store them till I get to the puree stage. I'm also going to portion the leftover gravy so I have something to moisten the meat. I'm not sure what other high Protein ideas there are. I'd sure like to hear more ideas though!

I use baggies and ice cube trays to freeze small portions. Portion your meats to the serving size for you and anyone else who is sharing the meal. For example, I now pack my ground beef into 12 oz. packages. My husband has a 6 oz burger and I have two 3 oz burgers (raw weight). For chili, I freeze in 2 cup portions. Hubby has 1 cup, I have 2 1.2 cup portions. Same for Beans. You will need even smaller portions at first!

For Protein post op I like:

tuna moistened with low fat mayo and honey mustard

Greek Yogurt, sweetened with Splenda or made into a shake (add a splash of orange juice, 3 Tablespoons splenda, `1/2 cup Water, and a couple of frozen strawberries)

Anderson Split Pea Soup

Low fat lunch meat

Low fat String cheese

Low fat chili

Soy Milk (8th Continent is 80 calories for 8 grams of protein)

For other foods:

For veggies, I buy frozen mixed veggies ( can just pour out a little for dinner) or just a dab of something fresh from the salad bar. Another option is a few pieces of broccoli, a single zucchini, or a handful of fresh spinach.

For fruit, I buy an apple and eat 1/4 at a time. I just wrap the rest up. It turns a little brown, but I slice that part off. I also eat 1/3 of banana at a time. I just slice it in the peel so the rest stays good. I also like frozen strawberries in the yogurt smoothie I drink for Breakfast.

I didn't really add starches back till I was further out. Now I have 1/2 piece of toast with Breakfast (save the other half for the next day), a few crackers, a small red potato, or a little of whatever starch my hubby wants with dinner.

Best investment that I have made for small portioning was to buy 12 little tiny plastic storage containers from Daiso Japan. They were so cheap but I use them for everything!

      Hi everyone! I’m brand new here. I just went through all my pre-op requirements per my insurance company and now everything has been submitted and I’m just waiting for final approval and my surgery date. I’ve been doing research, watching YouTube videos, TikTok’s, ect.. trying to prepare my mind and what to expect so I’ll be ready for the surgery. I was so sure and so set and so ready and excited. However, now that I’ve done everything & it’s almost here, I am sooooooo scared! I know why I want it bc I’ve tried everything and I just don’t feel like I can lose weight by myself. I’m tired of being overweight my entire life. I’m miserable, but I keep psyching myself out afraid of GERD bc I know how that can be and I don’t want to have to get a bypass after already gaining the courage to even get VSG. I’m scared of complications like I’mgoing to regret doing it and be depressed that I didn’t just be more disciplined and try again to lose the weight on my own even sitting here typing this knowing in my mind i just can’t and don’t possess the discipline. I’m also afraid I won’t be able to handle the restrictions of the sleeve. What do I eat? I don’t know how to eat healthy really and don’t enjoy healthy food. I don’t know how to do this! I feel so defeated!Someone tell me they felt anything similar to this or am I not ready? I thought I was. I am so tired of being sick and tired and so tired of myself and so tired of being stuck and stuck in this body and somebody different on the outside from what I feel inside. I just want to ball up and cry.

      The 14th was my day. I am home and recovery is going pretty smooth. They even let me walk out of the hospital. Picture of me in recovery curtesy of my boyfriend lol.

        Neat you have a pic of this day! I was sooo happy to get my surgery. It was well worth it! And I'm not even near my goal. I had surgery Dec. 2!
