Mini Quiche!

In my former non-sleeved life, I used to love to get these decadent quiches from a bakery down the street from my office. My all-time favorite was caramelized onions and bacon. Mmmmm.

After reading the Eggface blog and doing some Googling I made my own version. If you are interested, here you go...

4 tbsp Roasted Garlic & Onion jam (found at Fresh Market in a jar)

3/4 c. freshly grated smoked swiss cheese (found at Fresh market as well)

4 slices turkey bacon

4 eggs

1/2 c. fat free half and half

black pepper - 4 twists of the grinder or to taste

Non-stick cooking spray

Preheat oven to 350 degrees

Cook the turkey (or regular) bacon in the microwave until crispy.

Crumble bacon into mixing bowl (I used my bullet to make crumbles)

Add all ingredients to the mixing bowl

Stir until the jam is dissolved and everything is blended

Spray the mini muffin pan with cooking spray

Spoon the mixture into the cups

Bake for 30 minutes

Remove from oven and let cool

Once cool, pop out of tins and enjoy!

I think I will do a ham and cheese version later this weekend!

**I forgot to mention this makes 18 mini muffins**

OMG, that sounds awesome! Does the onion/garlic jam give it a sweet taste? Could I just carmelize my own onions instead?

Also, did you do the nutritional info on this? I can do it but am being lazy so hoping you already figured it out. :)

I was lazy too. I'm not tracking calories yet. I am trying to focus on Protein rich foods (It's only day 2 for me on solid food - LOL!) I find that I do better when I focus on one thing at a time with the WLS.

You could certainly caramelize your own onions. The jam gives it that sweet flavor too. I wanted something fast (in case I didn't like it) and the onions would have taken a while. Plus the jam blended easily into the mix so I went with it. Oh and it said "roasted garlic" so I was drooling in the store. :)

I made the baby blueberry mini-muffins this morning and I put my quiches in the oven for a couple of minutes with her muffins. They heated up great! I heated 2 but could only eat 1 before my sleeve was full.

So good to know the fat free half-n-half worked. I followed her recipe for my first batch, and they came out really dry (and I took them out well before the timer went off). I was thinking I needed a creamier base and was wondering if the fat free half-n-half would work. Thanks!!

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
