SuperMom 33 Posted August 23, 2011 Took an old recipe for snack pecans and did it sugar free. Mix together 2 egg whites 2 cups pecans 1 Tablespoon cinnamon 1 Tablespoon salt 1 cup Powdered Splenda (I used the one in big bag) bake 350 20-30 min (I used aluminum foil sprayed with pam so it came off easy) until dry and crunchy. Not sure of stats....but yummy and has protein! I forgot to put - make sure you include the egg whites....they kind of "bake" the pecans together like a praline (minus the sugar...hahaha) 1 emmas mom reacted to this

Indymom 132 Posted August 24, 2011 Mmm, it would probably work with almonds too, right? I'm drooling at the idea of crunching on something again . . . hope the next 6 weeks fly by!

italianlady13 80 Posted November 2, 2011 They DID turn out yummy, but you have to wait unti they are completely cool, in a tin and in the fridge over night before they get nice and crispy.....I think next time I will use Stevia instead of the brown sugar. The brown sugar made it super super sweet.
