Virginia S 13 Posted May 20, 2011 I've always loved Breakfast casserole, but most of them are more bread than Protein. Not this one! One serving (and I could only eat 1/2 a serving) has 140 calories, 12g of protein and only 3g of carbs. 1 1/2 cups ham (cubed or shredded) 6 oz plain Greek yogurt 1/4 cup crushed crackers (saltines/Ritz) 1/4 cup shredded cheese 2 tablespoons margarine 1 tablespoon finely chopped onion (I used onion flakes) 6 eggs Preheat oven to 375 degrees. Spray an 8x8 pan. Melt the margarine in a large bowl. Add the ham, yogurt, crackers, cheese and onion. Stir. Beat the eggs in a separate bowl, then stir into the first mixture. Bake for 20-25 minutes or until center is firm. Amanda131 214 Posted June 19, 2011 I tried this and it was AWESOME! I used Canadian Bacon style ham and chives for the onion. I also added a cup of fresh spinach. I forgot to put the cheese in it so I sprinkled it on top and that turned out YUM-O as well. Eddie Giddens (MsDad) 14 Posted August 19, 2011 Haven't tried this recipe yet, but you could probably substitute crushed Pork rinds for the crackers and drop the carbs to virtually zero. Plus the pork rinds would add a slight bacony flavor, perfect for a breakfast casserole. Either way, this sounds yummy and I'm going to try it when I get to that stage.
