I bought the ingredients for these the last time I was shopping. I used shredded Romano cheese though. I usually don't like

Fat Free cheese so I have to say I was pretty sure I would end up throwing these out; like I have so many other recipes. At

the same time I didn't want the additional calories from a fuller fat version so I figured why not give it a try with FF first.

Well I have to say they came out very good. I only made 1/2 batch to see how I would like them. I'm four months out and

this past week I seem to be getting hungrier so I thought of these for an afternoon snack. I only ate two so far and one

was not as thin as the other - I liked the thinner one better since it was crispier.

I watched the YouTube and made them and they are sooo good. My husband went gaga over them and wanted me to make the entire package of cheese! then my friend cam over and I made a slice and she went nuts cuz her husband is a Cheez Nips guy! Luv them.

Beachlover - I've seen posts not just here but elsewhere where people use all sorts of cheese so I say "go for it" - and of course let us know how it goes.

SleeveDreamer - I watched the video too and will definitely give it a try. What type of cheese slices did you use?

I used Kraft American slices for 65 seconds and then let them sit o the parchment paper for a minute to get harder.

There's a pic posted in the post above dated July 31, 2011. All you do is cut a slice into four strips and then subcut each strip into 4 squares. Click on the pic and watch the YouTube.

shredded parmesan. Can't stand the fat free and I'm more worried about carbs than fat as long as I stay under 30 grams of fat for the day. If I go a little over on fat I don't worry. Carbs I have to keep low or weight loss slows. Good thing about cheese, no?

I have to watch the carbs also. Something else to add to this is pepperoni slices. A person could broil them on a cookie sheet first and then add the cheese as the pepperoni slices start to curl a bit, or it might work to cook them together. My gut tells me it might be better to add the cheese as the pepperoni is almost cooked up. I LOVE pepperoni slices! They are my snack of choice. ZERO carbs!!! Good source of Protein when I need a little in between filler too!

I found cheese crisps at Whole Foods recently, and I'm sure they're the same thing, just baked shredded parmesan cheese, but they're thicker than I've made them. Like everything at Whole Foods they were $$$ - need to get back in the kitchen to experiment again.

I LOVE pepperoni crisps. I do those in the microwave, just a bunch of slices on a paper plate and/or paper towels, micro until they stop sizzling. So yummy, so easy, and they make great "pizza" topping on Friday night (I make low carb flat bread or tortilla pizzas a-la Eggface).

This is another version of this recipe that I found in a low carb cookbook. No processing necessary.

Parmesan crisps

A piece of good parmesan, (and a bit of cheddar too if you like). Parmesan is a great source of Protein so choose one which has a lot of it. Pinch of cayenne pepper. Thats it.

1. Preheat oven to 190 deg C or gas mark 5

Cover a baking sheet with bakingt parchment or those clever silicone non-stick sheets.

2. Coarsely grate the parmesan and/or cheddar. Add a pinch of cayenne if you like a bit of heat with your crunch.

3. Pile the cheese onto the baking sheet in little clusters. Obviously they are going to spread as they melt and so make sure to space them far apart.

4. Stick them in the oven and watch them like a hawk, they only take a few minutes.The idea is for the melted cheese to spread and go a little crispy.

5. Allow crisps to cool and peel off. If they're melted into one big sheet, break it apart.

Depending on which type of cheese you use, and how much, plug into MFP or similar to find nutritional values.

Here's an update on what I've been doing. While I did try the original recipe and enjoyed it once I saw the posting about the YouTube video I watched it and it is so much easier to make and I've tried different cheeses. What I found is that 2% medium cheddar cheese slices by Sargento works best. They taste the most like cheese its and the recipe couldnt be easier in the microwave.

Simple directions are to take a slice of the cheese cut it into 16 little squares and put it on parchment paper. Put it in the microwave for 60 to 70 seconds and they're done. This has become my regular go to snack when I want something in between meals and slices generally have from 6 to 8 g of Protein. Like I said already to me the 2% medium cheddar slices by Sargento taste the most like cheese it's of all the types I've tried and it was the lowest in calories too.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
