Pistachio ProteIn Muffins

OMG! Tonight I made the pistachio Protein mini muffin recipe from Eggface and it was incredibly delicious! I used cottage cheese instead of oil and they came out moist and amazing. My fiance said they are his favorites so far.

Attached is a picture of the cute yummy darlings that I baked up tonight. Eggface's fun muffin/donuts recipes are really keeping my carb and sugar cravings to a minimum.

I calculate the stats as:

serving: 1 muffin

43 calories

2g fat

3g carbs

4g Protein

Rockin' my sleeve with some help from my mini muffin pan!

Trader Joe's has almond meal. Finding pistachio pudding was a chaLlenge... Safeway had it stocked for st. Patty's day.

I used roasted salted pistachios on top to add a salty crunch. Yummy!

Interesting recipe. Doubt I'll find almond meal, anyone know what can be substituted? Or should I just grind some almonds in the food processor?

Just grind it in a food processor. I have a lot of German recipes that ask for hazelnut meal and I always do that. Works like a charm!

I also use almond meal to make Orgeat for cocktails!

I found the mini muffin pans at Bed Bath and Beyond but they also have some at Walmart. I ordered the mini donut pan from Amazon.com which I imagine also has mini muffin pans!

Good luck and hope that you can find them soon. Mini muffins and donuts have sure helped me with my carb cravings... and Eggface bites recipes are awesome breakfast/snacks!

Thank you for your info. I've looked at our Walmart here in my town and we don't have them, either that or I looked in the wrong department. Can't get much help there they don't know where they moved things too either. lol

      Two months out from hiatal hernia repair.  Surgeon said to expect a lot more flatulence...something about the 'air' no longer being able to 'burp' out so comes out the other end.  That is my experience but have no understanding of why that swallowed air cannot be 'burped'. ???

        As I understand it since your stomach is smaller and not completely resting against your diaphragm anymore you no longer have the ability to "push" burps out as well. Plus, since its smaller and we don't digest slower the trapped air moves a lot quicker out of the stomach so its no longer available to burp out. Hence the other option for removal.

        Not yet. I was told I only have to do 24 hours of a liquid diet. But I have my pre-op tomorrow so I’m going to confirm if I need to do longer.

      Down 33 lbs and slightly stalled, but I'm gonna reevaluate and push through. I started back to work last week after 2 years of being disabled due to mental health as well as my weight. It's a great job and I'm just so happy to have this opportunity at a second chance at life. Hope everyone is having their best journey ❤️ Together, we got this!
