TStew 25 Posted February 10, 2011 Baked eggs in Bacon Rings Adapted from Dr. Atkins' Quick and Easy New Diet Cookbook: 6 strips nitrite-free bacon melted bacon fat for brushing tins 4 slices Tomato, each about 1/2 inch thick 4 eggs pepper to taste chopped onions (optional) Preheat the oven to 325. Cook bacon in a skillet over medium heat until it begins to shrivel, about 3 minutes. Remove from heat. Brush 4 cups in amuffin tin or 4 small ramekins with bacon fat. Place a tomato slice in thebottom of each cup. Circle the inside of each cup with 1 1/2 strips ofbacon. Break an egg into each muffin cup and season with pepper. Can add chopped onions. Fill any unused tins with Water to protect them fromburning. Bake in the oven for 20 minutes. To serve, loosen the edges of the eggs with spatula and transfer the eggs to plates. Globetrotter 1,340 Posted February 11, 2011 Sounds good but all that talk of bacon fat makes me a little queasy, I think I would prefer Eggface's Muffin-less McMuffins; she takes a ring mold puts it in a frying pan, places a round sausage patty at the bottom, breaks an egg into it , and lets it cook. thinoneday 445 Posted February 11, 2011 has anyone tried these yet? Do they like really stick? I'm wondering if using pam spray wouldn't be better to prevent sticking cause with my luck they would never come out and i'd end up throwing them away. . . TStew 25 Posted February 12, 2011 Have not tried these yet but I remember a similar recipe on one of the Suzanne Somers videos about cooking healthy. Her husband's favorite recipe and he made them with crispy fried onions I think. Looked AWESOME! I'm not ready to pull out that video because I haven't even reached the mushy stage and don't want to torture myself more than I already am.... lol But I will pull it out soon and watch it again to get some ideas. I'm not sure what he used to cook them in but they were low carb so probably similar to the recipe above. Share this post Link to post Share on other sites
brandynd 6 Posted February 12, 2011 I'm on my 2 week pre-op and trying to watch every carb I put into my mouth, but I made a modified version of these for Breakfast and they were awesome! I didn't have any tomatoes on hand, and I used low sodium turkey bacon. Here's how I did it. 4 strips lo-so turkey bacon 4 Medium eggs 1/2oz low fat monterey jack cheese Made 4 "egg muffins" I microwaved the turkey bacon for 2:30, long enough for it to get a bit warm and for the grease to cook off. Then I drained the grease. I sprayed the muffin tins with a little bit of olive oil cooking spray (0 carbs, and doesn't leave a weird taste) Pre-heat the oven to 450 (I had to cook it on a higher temp to get the eggs to set right) Then I wrapped the bacon in the tin like the recipe calls for (except I only used 1 strip of bacon per tin), and put the egg in. I sliced a half an ounce of cheese, and put a little on top of each tin. I ate mine over some steamed broccoli....it was SOOO good, and with all of the calories and nutritional info. from the ingredients, I had 2 of the baked eggs and bacon and 2/3 of a cup of steamed broccoli for 240 calories and 4 net carbs. Yum! Using the olive oil spray really helped, and it didn't stick at all! Also, I think using the bacon fat might make these a bit oily in texture, so I opted not even to mess with that. My husband absolutely LOVED this recipe. I think this would be a good one for you ladies if, like me, you have a husband who LOVES to eat junk. He wasn't even aware that by feeding him this I was controlling is caloric and carb intake Overall, a pretty good morning meal! Enjoy!
