Potluck ideas??

Hi everyone!

I just joined a WLS support group and they are having a potluck next week. I have no idea what to make! I havent had my surgery yet so while Ive done some research Im not exactly sure what kind of foods would be good for the meeting.

Any ideas?

This is one that I make to ensure I get some Protein, and it's always a crowd pleaser, and I get numerous request for the recipe:

1 - 8oz package of nonfat cream cheese (softened)

1/2-1 cup of nonfat plain greek yogurt (will change based on personal preference for consistency)

1/2 cup 2% fat mozzarella cheese

40-60sliced pepperonis (quartered into little kind of triangle shaped)

2tsp of Italian seasoning (basil, oregano, thyme) add to Pasta sauce and greek yogurt in the directions below

1-2cups of Pasta Sauce or prepared pizza sauce (will make it more tomatoey versus creamy if you use the 2 cups, I use 1.5-2 cups of Pasta sauce based on the number of attendants)

I add 2tsp of garlic powder, 2tsp of onion powder as well since I don't put veggies in there because you never know if someone doesn't like veggies.

You can layer this dip in a 9inch pie plate with cream cheese, pasta/pizza sauce, italian seasoning, garlic and onion powdergreek yogurt (MIX all those together until smooth) on the bottom, arrange the pepperonis (or other pizza toppings listed below) evenly over cream cheese mixture, , Pop in a preheated oven at 375 for 15 minutes, remove from oven, sprinkle mozzarella, and return to oven until mozz cheese is melty. OR, you can mix it all together into a mixing bowl, microwave it for 3 minutes, stir and microwave for 1-3 minutes until the cream cheese is completely smooth. Toss it all in the crock pot on "warm" to keep it warm. If you choose to use the layer method, I recommend using the 1 cup of pasta/pizza sauce, and only 1/2 cup of greek yogurt, or it will be a runny mess.

I serve it with those Flipside pretzel/cracker combo thingies, my kiddo loves to roll it up in a tortilla.

I've never done the calorie/carb Protein counts for this recipe. It is low carb with about 4-8 gr of carbs per serving depending on the cheese and pasta sauce you use, plus the greek yogurt increases the protein count. You can also substitute chopped up italian sausage, or bulk hot sausage or canadian bacon, ground turkey (I've made it with ground turkey and it's yummy), or any pizza topping in place of the pepperoni.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
