Three Cheese Egg Bake

Tried this last week and it was a hit ... and it's high in Protein. According to my calculations it's 387 calories and 21g of Protein (for 6 servings). I know it's a bit high in calories, but for now, I'm eating it pretty regularly because I can't seem to get enough protein or calories. Warms up well and you can even refrigerate over night and bake the next day.

4 eggs

1/2 c. whipping cream

1 tsp. sugar (I used splenda)

1/2 lb. Monterrey Jack cheese, shredded

2 oz. light cream cheese, cubed

1 c. light cottage cheese

3 Tbsp. butter or margarine

1/4 c. chopped green onions

1/2 c. flour

1 tsp. baking powder

In a bowl, beat eggs, whipping cream and sugar together. Stir in the cheeses and mix well. Melt butter in small skillet and lightly saute onions; stir in flour and baking powder (will be crumbly). Combine mixtures and blend well. Pour batter into a greased 1 1/2 quart casserole dish and bake at 325 degrees for 45 minutes (if refrigerated, bake for 1 hour).

sounds delish but it's only about 3 grams of Protein per serving. I try not to eat anything that has less than 10 grams. Maybe you could add an unflavored Protein Powder to up the grams?

How did you get only 3g of Protein per serving? According to my calculations between the eggs, cream cheese, cottage cheese, and 1/2 lb of monterrey jack and flour (124.8g for recipe), that equals about 20.8g per serving (that is 6 servings). Where did I go wrong? I agree, 3g of protein isn't worth it.

Because you said 21 grams of protein for 6 servings, which equals out to 3.5 grams per serving. Or did you mean, 6 servings, 21 grams of protein each? If that's the case than this dish rocks.

      Two months out from hiatal hernia repair.  Surgeon said to expect a lot more flatulence...something about the 'air' no longer being able to 'burp' out so comes out the other end.  That is my experience but have no understanding of why that swallowed air cannot be 'burped'. ???

        As I understand it since your stomach is smaller and not completely resting against your diaphragm anymore you no longer have the ability to "push" burps out as well. Plus, since its smaller and we don't digest slower the trapped air moves a lot quicker out of the stomach so its no longer available to burp out. Hence the other option for removal.

        Not yet. I was told I only have to do 24 hours of a liquid diet. But I have my pre-op tomorrow so I’m going to confirm if I need to do longer.

      Down 33 lbs and slightly stalled, but I'm gonna reevaluate and push through. I started back to work last week after 2 years of being disabled due to mental health as well as my weight. It's a great job and I'm just so happy to have this opportunity at a second chance at life. Hope everyone is having their best journey ❤️ Together, we got this!
