SParkle 4 Posted June 27, 2010 I've got an idea which I'm going to be trying this week when I swap to mushies.... Corned beef - mixed with onions (dry fry the onions off to soften them), then top with cottage cheese which you have mixed with a beaten egg, maybe adding a bit of mixed herbs of tarragon in with the egg mix too. They are like a quiche - with the corned beef being the 'pastry' base. I'm going to try making them in a muffin tin, so I get bite size ones - the texture is mushy so I think they'll go down a treat, and when I've made it before although I made one big version they were good hot or cold. Donna4545 13 Posted June 27, 2010 Try this--it's like a mushy deviled egg thing. Makes 4 servings 4 medium eggs, boiled Dice eggs and put in food processor with 2 TB low-fat mayo, 1 tsp dried minced onion, 2 tsp Dijon mustard, 2 tsp paprika, salt and pepper to taste.
