I Love Watermelon!

Watermelon with salt...great mercies. That is the most yummy thing EVAH!

It's just gotten hot enough here in the last week or so for me to feel like sitting on the back patio, eatin' watermelon and spittin' seeds all while watchin' the lightnin' bugs.

I'm Southern to the very core :) It makes my soul happy.

Awwww lightnin' bugs. I remember those as a kid.

Ate watermellon and spit the seeds too. Right after we shucked the corn that we picked from my great aunts corn patch in back of her house. Yup, good memories.

I like salt on my watermelon! I learned that from my mom :)

The watermelon and grapejuice thing really does sound good.

I saw a recipe for "Amaretto Watermelon" and thought that sounded good. I might have to buy a little melon and fill it with some amaretto just to check it out.

I inherited my great grandmother's(from Greece) recipe book full of her tried-and-true recipes. One of the recipes is Watermelon Pie. I questioned it, until I tried it - it really was good, but one of those things you have to taste before you believe you'd like it. I've also seen versions of it online, such as:

  • 1 1/2 cups all-purpose flour
  • 4 cups mashed watermelon, seeds removed
  • 1/2 cup honey
  • 1/2 cup white sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup sesame seeds
  1. Place the flour in a dry skillet over medium heat. Cook for a few minutes, stirring occasionally, until golden. Set aside to cool.
  2. Preheat the oven to 350 degrees F (175 degrees C).
  3. In a large bowl, stir together the watermelon, flour, honey, sugar, salt and cinnamon. Grease a 9 or 10 inch pie plate, and sprinkle half of the sesame seeds over the bottom. Pour the watermelon filling over the seeds, the filling should be about 1 inch thick. Sprinkle the remaining sesame seeds over the top.
  4. Bake for 40 to 50 minutes in the preheated oven, or until a knife inserted near the center comes out clean. Allow to cool completely before slicing. Refrigerate leftovers.

Watermelon is very filling for me.I'm just wondering since it seems to produce alot of juice is it really bad to eat it on a regular basis?Wondering because thought I read a post said it's high in sugar.

Kat, While watermelon doesn't freeze well; oddly enough, most other melons will. If you find cantaloupes or honeydews on sale ball 'em and freeze 'em and enjoy them all through the long hot summer.

According to FitDay, raw watermelon has ony 49 calories per cup. I find it to be VERY filling and can only do a cup at a time. Then, an hour and a half later, ANOTHER CUP! LOL

Love me some watermelon.

I'm not gonna say "never" or even "ewww", but, watermelon pie? I can't even imagine the knife coming out clean! Well, maybe after baking for 8 hours! lol Hmmmmm. Anyone gonna try this one? I hope so. I want to know how it is!

I feel like I'm in good company!! My DH came home yesterday with a huge watermelon. :hungry: My boys were talking 90 m.p.h. about it. Can't wait to eat some on the deck and laugh at my kids. :) Now, just to make sure....your barefoot right?

My kids and I live on this through the summer.

Add whatever kinds of fruit you prefer to a bowl...lots of different kinds of melon and fresh pineapple. Then you mix in low or no fat coolwhip...usually I use a whole tub...mmm luv it! We also add cool whip to sliced bananas and strawberries.

We eat an obnoxious amount of watermelon in the summer and I force myself to ignore the high sugar component...

I'm going to make the watermelon pie tonight to bring to work tomorrow, but I'm not going to tell anyone what it is til after they've tried it! Will let everyone know the outcome.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
