Tiffykins 673 Posted February 28, 2010 Okay, so the kiddo had a friend over today. They wanted grilled cheese, and chips with dip for lunch. So, mommy Tiff goes into creative mode. I did this while they were outside and let it set up in the fridge for about an hour before we tried it. 2 cups of Fage non-fat greek yogurt 1/2 cup of fresh diced sweet red pepper 1-1.5 tsp of ground cumin 1 cup of black Beans drained and rinsed well 1-1.5 cup of low fat shredded cheese (I used this mexican cheese) 1 Tbsp of diced green chilis (canned) 1 tsp of garlic/pepper salt 1/2 tsp of your favorite season salt 1 tsp of dry fajita seasoning LOVE IT ! ! ! The boys ate it with Fritos, I ate it with baked pita chips, and the husband dipped a tortilla in it. All in all it was a success considering there is none leftover. If he only knew he was eating ground flax seed laced and Splenda sweetened banana nut muffins. Ha ha ha I'll just keep posting my yummy creations. I finally figured out how to "season" my wok, and am so stoked that I can make my own Asian inspired favorites here at the house for 1/3 the cost of dining out. Tiffykins 673 Posted February 28, 2010 I forgot to mention that you can substitute the garlic/pepper salt with garlic/pepper powder to help and even leave out the season salt.
