Tiffykins 673 Posted January 11, 2010 I made my favorite venison chili this evening, and thought I would share how much I can eat and what it actually looks like. It takes me about 20 minutes to eat this amount of chili. 1 cup of chili w/ 2 tbsp. shredded cheese and 3 saltine crackers. These little bowls are fabulous. They measure 2 cups evenly. They came in a set of bowls in various sizes made by Reynolds. They are to-go bowls found near the Gladware stuff in most retail stores. Nutritional info on the chili: Serving size 1 cup 395 calories 51 grams Protein 14 grams of fat 12 grams of carbs Crackers 36 calories 7 carbs 1 fat 1 protein Shredded Fiesta Cheese 1/3cup (I only used 2 measured tbsp): 110 calories <1 gram carb 6 grm Protein 9 grm Fat Share this post Link to post Share on other sites

Tiffykins 673 Posted January 11, 2010 1lb of lean ground venison 1 can of Tomato sauce 1 can of tomato paste 1 can of Light or Dark Kidney Beans (drained/rinsed) 1 medium yellow onion chopped coarsely chili powder (to your specific taste) I use about 1/3 cup ground red pepper (to your specific taste) We like it hot in our house. Worchestershire Sauce (just a couple of splashes, but some don't like it) Ground White Pepper (to taste) Ground Black Pepper (to taste) Heat 2 tbsp of extra light virgin olive oil in skillet, once hot, throw in onions (I add minced garlic as well), sweat the onions until soft. Add ground venison, brown thoroughly, drain and rinse all drippings. I take an extra step and use papertowels to get rid of excess drippings. Throw meat, and all above ingredients in crock pot minus the Beans. Cook on HIGH for 3 hours, decrease heat to LOW add beans, and cook for additional 2-3 hours. That mean alot to me since at this stage in my journey there are days where I am only able to eat a couple of table spoons and other days where I can get in about 4 or 5 oz of Soup or fish etc. Thanks Tiff for being so attuned to the needs we all struggle with. I have some really old bowls that have measurements on the inside of them, but anything "red" stains them, and I have to scrub with baking soda. BLAH My husband uses those bowls for his lunches. Chili is just so comforting to me. The venison is so perfect because of high Protein and it being so lean. I'm going to be upset when we run out of venison. FabBy50 0 Posted January 11, 2010 Hi Tiff I love chilli, if I don't do homemade I buy Nally's turkey chilli. I don't eat red meat so the regular version is out for me. Thanks for the tip Tracy. I'll have to do some major searching for bison around these parts. We're in seafood hell down here. I can find 1000's of fish, but finding bison maybe difficult. Boredoncemore 0 Posted January 12, 2010 I shall do the chicken dance if/when I'm ever able to eat a full cup of real FOOD! and with CRACKERS! Takes me 20 minutes to get down that 4 oz of applesauce and even then I leave some in the cup! This saturday I'm making my extended family go to a fancy resturant for my birthday, so I can watch everyone eat awesome food...I'm serious, since I can't eat I want everyone else to eat so I can see and smell, if I'm lucky I might get to cough down a spoon full or two! Deb 0 Posted January 17, 2010 I was beginning to wonder if I was ever going to enjoy eating anything again. I will be 3 weeks out Tuesday. liquids go down well...even thick liquids but anything solid (even a soft solid) gives me a fit. Maybe I am eating too fast still. I don't know.
