took chicken breast (shredded it) almost pulled pork texture made sure it was small sections

took green/yellow/red bell peppers and diced them up (yep eating as i was chopping) and also took a gorgeous white onion and also diced it up

took some shredded cheese and some salsa out

sprayed a frying pan with pam spray

tossed in the onions/peppers and browned (gosh that smell is divine) then put in the chicken and let it cook til done/tender

before serving, add cheese to the top (measured out to my 1 cup--quite filling) (hub added sour cream/salsa to his and a couple large tortillas)

and we be talking filling and very tasty.

Sounds delicious, but there is no way I can eat chicken. There is very little meat that i can actually eat. I usually have tuna or ground turkey, thats the extent of meat that I can handle..some days I wonder if I'm too tight, but other days I feel like I could eat a horse!

I'm going to try this sounds good. How do u get your chicken to shred?

hey there.........well i boil chicken breast til done, and just pull apart so it resembles pulled pork..you can also chop into wee pieces or toss in a mixer and whirl a few times to help the process.

and i think you can use any meat (or even tofu i feel would be good as you can season it in any fashion)

Great recipe. When I make this I top it with plain ff greek yogurt (tastes like sour cream) and salsa.

Even have my hubby and daughter eating yogurt for sour cream. (I know you don't like yogurt)

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
