I was wondering why you have to eat the Protein on your plate first.

Because Protein is an essential nutrient we need and there's a chance that if you ate the rest first you'd get full and wouldn't be able to eat it x

That is what I was told... Protein first, since it is what helps make you feel satiated and holds off hunger between meals. Also, having enough protein helps to protect muscle mass from being used to fuel your body.
