I used fat free cheddar cheese (same amount), a 3 ounce can of chicken, 1 egg, celery seeds (I don't like celery), and onion powder. Mine are going to be less than 60 calories each (probably because of the fat free cheese and less chicken ratio) and 8 grams of Protein. Cannot wait to try variations...adding some sage to make it taste like chicken and dressing...some rotel to make it taste like Mexican chicken...broccoli (like someone mentioned)...the possibilities are endless. If it is OR, then are the nutrition facts for egg or egg white? I've not had my surgery yet as I am waiting for the insurance papers to get done, but I am looking for recipes to start using as I prepare for surgery. Any help would be much appreciated! steph2012 252 Posted October 11, 2013 I make a high Protein bacon & cheese muffin. I'll post the recipe when I find it (at home). I'm still perfecting it to suit my own taste. It makes 24 muffins so once you experiment with a batch, you kinda have to eat them all before testing new ingredients. I like that your recipe only makes 3 muffins! Will be trying this one for sure! steph2012 252 Posted October 14, 2013 OMG! These chicken muffins are delicious. I added diced onion instead of onion powder because I was cooking & already had the onion cut up. I cooked the celery & onion before adding. I found they did stick to the pan a little. Maybe I didn't use enough cooking spray. So spray muffin pan well.
