Terry Poperszky 2,784 Posted February 13, 2013 So I bought a big bag of spinach at costco the other night, I usually have it mixed with scrambled eggs. Tonight I put some olive oil and garlic in a skillet, then threw in a big handful of leaves and and sautéed them until they were wilted. Oh, don't forget the laughing cow lite creamy swiss cheese wedge to put in that tuna. shady2121 74 Posted February 13, 2013 Last night I used thinly sliced zucchini as my spaghetti noodles for my spaghetti. It was fantastic, cooked the zucchini in a bit of olive oil then poured the spaghetti sauce made with turkey pepperoni over the zucchini. this sucks 557 Posted February 13, 2013 Roast your veggies to make them more band friendly. I toss baby carrots ( which I cannot handle well uncooked) or Broccoli or cauliflower in olive oil and Italian seasoning (the dry herbs, not the salad dressing) and roast them at 325 for 20-25 minutes. The get soft and sweet and oh so tasty! Also, you can make honey roasted carrots or sweet potatoes by tossing in olive oil and top with a little drizzle of honey.
