Emily's Zucchini Tots - Awesome!

Thank you to all those that reference Emily Bites and Skinny Taste. Never heard of either of those until I jumped on these boards. They have scads of the easiest most delicious sounding recipes. Tonight I took a gander at making Emily's Zucchini Tots. So super duper easy, very low carb and takes no time to make. And guess what? I think they are absolutely delish! Zucchini isn't my favorite veggie (unless it's breaded, fried and served with a side of ranch!), but these are pretty darn tasty. The only thing I did differently from the recipe was to put them under the broiler for a few minutes to really brown them up.

Just thought I'd put my two cents in, just in case anyone was curious but hasn't taken the chance on making them. :-)

I never knew I like zucchini until I found recipes on those two sites. Just pinned a recipe for zucchini spaghetti.

I make them and freeze them and put them in the toaster oven to crisp them up for lunches. My new fav is the enchalida cups............have made 2 batches of them, and they are also good from the freezer and put in the toaster oven to get them crispy. Happy cooking

Thanks for that...I wasn't sure if they were freezer friendly. Because I had 2 zucchini's not knowing how many I would need to get a cup, I ended up with 24 zucchini tots. I had 3 tonight with my 3oz of pork but unless I want to eat these for Breakfast lunch and dinner for the next 7 days I better give them away or something. So I'm going to bag some right now and chuck them in the freezer. I also have a toaster oven that I use heavily (being single it's faster than the oven) so I figured I could just warm them in there...good to know that works too! Thanks again! And I'm staying away from the enchilada cups for now because of the phyllo cups (I'm low carbing it) but I love Mexican foods and when I get a little closer to goal you better believe I'll be making those! SkinnyTaste has a recipe for chicken enchilada zucchini boats. Might give that a try in the meantime...they look awfully delicious! Ahhhh, so many recipes, so little time! :-)

      Just been waiting until time for my consult with my bariatric surgeon. It's scheduled for Jan 9th. Turns out I won't actually be seeing him. Apparently it'll be with his P.A.             Not sure what to expect. I thought this is where the surgeon would discuss the best surgery option for me. For years I had my heart set on the sleeve, but I've read so many people have issues with reflux - even if they've never had it before - that they've had to be revised to the bypass. I already deal with GERD & take 40 mg of Omeprazole daily, so I started studying about bypass and honestly, it seems like it might be the better choice for me. How can we discuss surgery options if the surgeon is not there?
      What happened at your first consult? Trying to get an idea of what to expect, or maybe I should say, what NOT to expect.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.
