I'm going again for blood work since they weren't ale to draw blood the first time and I'm not supposed to eat for 8 hours but I realized that I ate what will be 7 hours before my appointment. Do you think that matters?

It depends on the type of bloodwork you're getting and what you ate.

If it's for something like blood sugar levels, and you ate fruit, carbs, or sugars, then yes it could matter and effect the outcome.
