Yummy Chicken Thigh Meal

So before I decided to do the lapband surgery, I had lost a lot of weight doing PALEO. Which means no sugar, grains, dairy. I did very well with this. But like all my diets its my self control etc... anyway great meal!! So tasty!

174 calories

10 grams of fat

6 grams Carbs

16 grams Protein

420 sodium

2 lbs boneless skinless chicken thighs, season them with salt and pepper each side.

1/4 cup coconut oil

½ medium red onion, diced

3-4 garlic cloves minced

½ cup unsalted chicken broth

¼ cup coconut aminos (any health food store, i use this instead of SOY Sauce)

¼ cup apple cider vinegar

Lots of black pepper

heat coconut oil in pan, then put the chicken thighs, brown both sides. remove from stove stop and add the onions to same pan saute them, add the garlic and stir around for another 1 minute. The ad the unsalted chicken broth, coconut aminos, apple cider vinegar to the onions and garlic, mix it all up and bring to simmer. Add chicken back to pan turn heat down to low and cover and simmer for 5 minutes, turn chicken over and cook for 5 more minutes

Looks awesome but where is the sodium coming from?

Coconut Aminos....its 65% less than Soy sauce but still 113 per teaspoon.

You can leave it out if needed. Remember its between 1200-2300 per day of sodium.

      Two months out from hiatal hernia repair.  Surgeon said to expect a lot more flatulence...something about the 'air' no longer being able to 'burp' out so comes out the other end.  That is my experience but have no understanding of why that swallowed air cannot be 'burped'. ???

        As I understand it since your stomach is smaller and not completely resting against your diaphragm anymore you no longer have the ability to "push" burps out as well. Plus, since its smaller and we don't digest slower the trapped air moves a lot quicker out of the stomach so its no longer available to burp out. Hence the other option for removal.

        Not yet. I was told I only have to do 24 hours of a liquid diet. But I have my pre-op tomorrow so I’m going to confirm if I need to do longer.

      Down 33 lbs and slightly stalled, but I'm gonna reevaluate and push through. I started back to work last week after 2 years of being disabled due to mental health as well as my weight. It's a great job and I'm just so happy to have this opportunity at a second chance at life. Hope everyone is having their best journey ❤️ Together, we got this!
