Mashed Potatoes Made Out Of Caiuliflower

Take a whole cauliflower head, steam it til it's mushy (20 min?). Put it in a blender, it will come out the consistency of mashed potatoes. Add salt, and I swear you can barely tell the difference between them and mashed potatoes! Helped me last night.

Oh, it's 14 cals per half cup of steamed cauliflower (not already mushed up). Keep putting half cups in until you reach your serving.

And I don't even like cauliflower. But you just can't tell the difference for the most part.

You know what makes it even better? Steam it with chicken broth, mmmmm.

Oh, but really, caulflower? I've heard you can't tell the difference, but I would. Eww.

Congrats on your find.... Glad it works for you....

I allow myself 1/4 c starch each meal so I will stick to the real thing. ;)

This sounds like such a healthy and yummy alternative!! Can't wait to try it... I would add a lil butter but not much!! lol .. thanks hun!!

I added ff cottage cheese 1tbs and it was yum-o!

I have never eaten calliflower nor does it smell good, but this sounds good! Maybe some lowfat sour cream too! Isnt it one of the veggies that causes alot of gas?

I've never eaten cauliflower either but this DOES sound worth a try. I think I'll try steaming it in chicken broth and then adding some S&P and Greek yogurt. Greek yogurt is a great substitute for sour cream and adds Protein. Thanks for this idea!

Cabbaged cooked in chicken broth, blended with s&p. Sounds good! Will let you know.

Cabbage, marinara, ff ricotta, ff cheese sounds good too.

I would add butter too if it were allowed right now.

Definitely add salt though!!!!

Shredded cauliflower can also be used as a rice or Pasta substitute :) Great for lo carb eaters!
