Buffalo Chicken Bites Recipe

Recommended Posts

buffalo-chicken-bites.jpg

These Buffalo chicken Bites are seriously amazing and one of the best Weight Watchers recipes I’ve ever made. They are a wonderful, much lighter alternative to traditional Buffalo chicken wings, but for a lot less Points. Each serving has just 3 Points +, making this an excellent dish to help you satisfy that Buffalo chicken craving. I like mine super spicy, so I served it with a side of extra Frank’s Red Hot Sauce, but they are also great as is, dipped into a low calorie ranch dressing or low calorie blue cheese dressing. Pair it with some celery for that authentic feel. These were so amazing, that my husband could not believe it was a light recipe. I’ll definitely be adding this to my list of must make Super Bowl recipes too!

Jlynn,

Thanks for posting this recipe! As a Buffalonian, I appreciate the attempt to be as close to wings as possible, using Frank's Hot Sauce and Blue cheese are key to making it truly Buffalo. And I am one of those people that will morelikely make a recipe if there is a picture of the dish, love the photo.

I am concerned though with the high carbs, but then, it's only 16 gms. And it has lots of Protein, YAY!

But whatever the case may be, this sure is better for you than wings. I'll be making these soon! :D

Thanks again!

I cannot wait to make these!! Is there any substitution for the corn flake outside? My boyfriend isn't a huge cf fan.

You can cut the carbs and increase the Fiber by breading in pulverized fiber one Cereal, the original twiggy kind instead of the corn flakes.

Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
