Yummy Veggies

My husband is totally anti veggies. I have always had to come up with creative ways to get him to eat any type of veggie and this one is a hit.

Slice up you fav veggies (I used 2 fresh yellow squash, a fresh green and black pepper, and one large red onion- it was just what I had on hand)

I cut the veggies in bite size pieces and placed them all in a bowl, I added 1/4 cup of italian dressing and a 1/4 cup of parmesean/romono cheese and tossed all together. I let the veggies sit for about 15 min. Pre- heated the grill on high heat. Spread the veggies out on to a grill pan. Turn the grill down on medium heat and place the veggies on the grill. Stir veggies periodically- cook about 15-20 min until veggies are tender.

These were awesome. Of course it made a lot and we ate on them for 3 days, but they were a wonderful side dish with anything.

The hubs even said they were really yummy to be veggies.

That sounds yummy! I think I'm gonna try it.

OR - I might put the veggies on a skewer and grill them directly.

Any grilled veggies are good veggies!!! I cut up yellow, orange & red peppers with mushrooms (love mushrooms), onion and fresh garlic. Mmmmm don't need anything else. After banding will have to have Protein first.

I used to think ALL veggies sucked, until I had them on a kabob. WOWZA! I want to eat this all by itself, but, like you, I have to have my damn protein! Can we cheat on our diets with veggies? Oh, if my Mom ever heard me say that... :o

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
