Pumpkin Soup, Low Fat (Protein Packed)

Okay, so I am not banded yet but I am trying out new recipes for when I get to the 'mushie' stages in my weigh loss journey. I tweaked a recipe I found for pumpkin Soup and made it super low fat and packed with Protein. I enjoyed this and you may too find this recipe a favorite or you can tweak it yourself :)

Makes about 4 cups (great for freezing leftover portions) You will need a blender for this ...

Ingrediants:

1 can of Pumpkin Puree (16 oz. can) Pumpkin is packed with fiber!

3 cups of low sodium chicken broth

1 cup of non fat milk

1 tbs of low fat margarine ( i use smart blance with flax)

1 scoop of 'unflavored' Protein Powder

salt/pepper desired to taste (I do not use salt because I have high blood pressure)

Preperatations: Take your 1 cup of non fat milk and warm it in the microwave for about 25 seconds and add the 1 scoop of unflavored protein powder (mix until powder is dissolved and set aside). Next, in a 2 quart saucepan you want to put in the margrine and melt, add in chicken broth, pumpkin puree, and the milk with the protein powder. Simmer for only 15 mins. Pour into a blender for about 30 seconds until super creamy.

Veggie Soup of any kind is really easy to make. Normally you boil the desired vegetable with some stock and then blend to a smooth consistency. Most Soup recipes have some potato in them but you can leave that out if you want. To add extra Protein throw in a can of lentils,chickpeas,kidney Beans or similar. So you can make any kind of soup you want.

Experiment with different herbs and spices. Things like a teaspoon or 2 of curry powder go really well with pumpkin or cauliflower. Or stir in a teaspoon of seeded mustard to your pumpkin soup before you serve it, that really gives it a special taste.

      Just been waiting until time for my consult with my bariatric surgeon. It's scheduled for Jan 9th. Turns out I won't actually be seeing him. Apparently it'll be with his P.A.             Not sure what to expect. I thought this is where the surgeon would discuss the best surgery option for me. For years I had my heart set on the sleeve, but I've read so many people have issues with reflux - even if they've never had it before - that they've had to be revised to the bypass. I already deal with GERD & take 40 mg of Omeprazole daily, so I started studying about bypass and honestly, it seems like it might be the better choice for me. How can we discuss surgery options if the surgeon is not there?
      What happened at your first consult? Trying to get an idea of what to expect, or maybe I should say, what NOT to expect.
