Just discovered pressure cookers!

Okay, I just remember my grandma's pressure cooker which scared me because the top thing rattled and my grandma said to not go near it. But I found a pressure cooker that's a standalone unit and is very safe. You just put your ingredients in, lock the top, set the time, and let it go! So I cooked a meatloaf and veggies in the pressure cooker last night in about 15 minutes and it was GREAT! I cooked a piece of chicken for lunch today in about 12 minutes and it was SO tender and moist, like it had been in a crockpot for 4 hours. Most of you know that dry, tough meat is often hard to eat with the band. I think this is my new real find so I can eat meats a lot easier and QUICKER!

Anyone have pressure cooker recipes? I think you can adapt most oven and crockpot recipes for the pressure cooker but I don't quite know how to do it yet.

I was raised on a pressure cooker and didn't think they were around any more. I never thought of cooking a meatloaf in there. How'd you do that?

HMMMMM......... I have a pressure cooker, but I never thought about cooking the way you are talking about. I may have to look into this! I usually cook Beans or potroast in mine. They are super quick & clean-up is easy too!! Thanks! If I come across any recipes I'll let you know. My potroast is just a roast with new potatoe, carrots, onions, cabbage & a package of onion Soup mix covered about half way with Water & cooked for about 30-45 mins.

HA! It's so friggin easy. I just make the meatloaf and put it in the loaf pan. Then I put 2 cups of Water in the bottom of the pressure cooker then set it for 12 minutes (once it's up to pressure). I'm scared of the burner pressure cookers so I bought one that's a standalone unit, like this one: http://tinyurl.com/kcdkf

That's a darling pressure cooker, but I'll check out Walmart's prices first.

I have a funny pressure cooker story: My 1st job was at Pioneer chicken (KFC's competitor 100 years ago.) One night there was a huge explosion that shook the building, so we all ran into each other thinking the world had come to an end. After realizing the building wasn't on fire, someone opened the door to the kitchen, where the pressure cooker had exploded open. They were cooking the gizzards, and there were chicken gizzards stuck all over the walls and ceiling. That was some funny !#$%!@$

Beans

2 cups of pinto or great northern Beans that you have looked over to take out all the rocks & bad beans

1 small piece of smoked hog jowl or a piece of bacon

salt & pepper to taste

sugar to taste if desired (for Lonnie - he loves his pintos sweet)

Rinse the beans & place in pressure cooker with enough Water to cover beans & fill pot about half full. Cook on high until the pressure cooker jiggles, then turn down to a medium high setting (7 on electric ranges). Let the pressure cooker jiggle for about 30 minutes, turn off & let cool. Stir beans & keep repeating the process until the beans are done. If you don't keep starting, stopping & stirring the beans when using a pressure cooker, the beans on the top will still be hard. This is the way my Grandma taught me to cook them. You can also use all the same ingredients & use a crock pot. Just cook all day or overnight. Grandma taught me a trick with the pressure cooker when cooking beans. After the pressure cooker jiggles for 30 minutes, take it off the burner & with the jiggler still on & the top still firmly on, run cold Water over the top until you hear no more steam escaping. What I do then, is to take the jiggler off the top & if no hissing is heard, it's safe to take the top off & stir. Pressure cookers are dangerous, but they have been greatly improved since my Grandma's day. Just be careful!!
