Mexican Chicken Chili

I went to a lap band meeting last night and they gave us some recipes that might help us get some new things introduced into our diet so we don't get bored :wacko:

I haven't tried this, but it sounds good, one of the ladies said it really looks bad when it's done but way yummy once you eat it.

1 Package of Frozen chicken Breasts - Aprrox 5-6 pcs.

1 Jar of Salsa

2 Cans of Black Beans

1 Packet Taco Seasoning

Add Water to mix season pack.

Cook all day in Crock Pot until chicken Falls apart.

You ca add Fat Free Sour Cream or Sprinkle cheese (Optional)

I think I might try this over the weekend, Sounds good B)

I used to cook that all the time. My kids love it too. You can also add different veggies, such as zucchini, black olives and so on. Sliced avocados on top is yummy too.

Question: I'm still too close to post op to try it, and actually a little nervous still but how do you all (veterans) handle spicy foods? I would add jalapenos to this recipe and I love spicy foods but I haven't ventured there just yet. Being from Arizona there are lots of spicy foods and I've been curious if those foods would be a problem now that I'm banded.

I eat spicy food all the time! My only issue is not being able to drink with something spicy, but I love it so much that it doesn't matter. :)

I have been putting Frank's Red Hot Sauce on the food that I am allowed to have. I ditto Tracie....I miss a cold drink if things get too spicy...but I have had not issues with my band and spicy foods so far.

Hey People.

I would like to help you all with some modifications, so you can incorporate some Fresh veggies, and spices in the chilli, yet still get the authentic latino taste.

1. Substitute the Salsa...for something more homemade.

you will need...

2 Red Vine tomatoes- diced

1 Small Onion( Big equals Genetically modified)- diced

1 small bunch of Cilantro- chopped

1 small bunch of "Recao". Go to any latino market, supermarket and produce stand for that)---Chopped

1 Yellow Bell Pepper- Minced or diced

Optional------1 Jalepeno, crushed, or pureed w/2tbsp of olive oil or coconut oil

For the Taco Seasoning ( which has Tons of sodium) here is what you can use

Goya Sazon con Achiote- Low Sodium

or

3 tbsp- Paprika

1tsp- Salt

1tbsp- Crushed Black pepper

1tsp of onion powder

1tsp of Hot crushed red pepper

Use this mix for every 1lb of meat/or poultry....

If you guys need some more tips, don't fret to holla....

mocaba: Thanks for sharing the edit on the recipe. I am on a big kick of trying to encorporate fresh ingredients, and limit my usage of pre-packaged goods. :) I make chili a lot, it is one of my staples. I am excited to now get rid of the seasoning packet!

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
