Tons of recipes out there, I make a salad with feta, lite balsamic vinagrette, chopped Tomato, olives and a little chopped onion. It tends to take on flavors of what it is mixed with, consistency is more like barley. when you make it it really swells and multiples, much more than rice! Careful or you end up enough for an army.
