Recipes For One

I live by myself and often buy chicken breasts or some other type of meat that's individually packaged. I know I can make meals and freeze leftovers, but right now my freezer is full (I keep extra meat, TV dinners for work, and some frozen chili in there).

Anybody have simple, easy and affordable meals I can scale down just for one or two meals (that way I'm not eating leftovers for 3-4 days )

I live alone as well, so if my freezer is full (usually all the time) I take any recipe and divide it by half (usually most recipes serve 4-6). Hope that helps!

I also recommend getting one of those machines that suck all of the air out of the bag before putting it in the freezer this helps me save a lot of freezer space for some reason, it's around 100 bucks but well worth the investment!

I didn't use to freeze anything. Now you can go to my freezer and have a buffet of choices. Chili, beef veg Soup, meatballs, meat loaf, beef stew, taco pie etc. And the food saver is worth every penny cuz everthing keeps for a really long time.

I find somethings really hard to make in small quantities like chili or Pasta sauce.

That's what it's called a foodsaver! LOL. I agree with sauces and chili as well, I have a hard time "cutting" those recipes down, so I'll just make a big batch of chili for example and foodsave 1 cup portions.

As a bander I would seriously advise buying a small freezer...I never ate frozen food before but now if I dont I have to eat the same stuff over and over or throw it out!

I don't like to cook, so when I do, I will make large portions and weigh out portions and stick them in the freezer. When I need food for work, I just pull it out of the freezer and grab whatever else I may need to add to it. i.e. veggies or whatever. Like I LOVE chicken parmagiana. I'll pull a cooked chicken breast 4 oz from the freezer, put some sauce in a tupperware, and put some RF mozzarella cheese in a ziploc and when I get to work and time to eat, throw it together and viola, chicken parm. Oh and I'll bring some veggies on the side.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.

      Woohoo! I have 7 more days till surgery, So far I am already down a total of 20lbs since I started this journey.
